One Hot Summer

OMG.....how hot was it today.

I made it worse by baking.....was determined to bake some Blonde Brownies, after all it was National Brownie day on Thursday this week. I am determined to try and make note of the smaller holidays this year. JUST FOR FUN.
Well - the first batch ...hit the bin, with extra helpers in the kitchen, disaster struck. So off to the shops for more ingredients. Back to the now very warm kitchen and a whole lot later in the morning. Banana Bread in the bread machine....it should be fine, NOPE...disaster struck. It is salvagable....something went wrong with so many cooks in such a little VERY HOT kitchen....and we have a very dry outer mix....it didn't mix properly...but we managed to get some very small slices from the center of the loaf to pop in the freezer...in readiness for school breakies and snacks.

Then on to the Cookies...it is Cookie Cybercrop over at Forever Always... so i had to search out a my favourite cookie recipe, well i like to bake, but my ulitmate favourite cookie i have never cooked before, it's always one of those giant shop treat type cookies - The Double Choc Macadamia Cookie. Well I found a recipe and it is soo yumm - they were a success.
Double Chocolate Macadamia Cookies
• 225 g butter, softened
• 300 g white sugar
• 2 eggs
• 10 ml vanilla extract
• 250 g all-purpose flour
• 55 g cocoa powder
• 3 g baking soda
• 2 g salt
• 335 g semisweet chocolate chips
• 60 g chopped macadamias
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

Then we got to trying the blonde brownies again, and well they aren't binable, but we do prefer our standard Rich Gooeey Donna Hay Brownie...

Ok well I am sitting back with an icy cold Cointreau and Ice ...just chilling tonight, hope your somewhere cool.
